C60 at the Merchant Hotel

The C60 Team have been out following the company ethos of sustainability with an evening of ‘sustainable food’ prepared by John Paul Leake, head chef at Belfast’s Merchant Hotel.

The event entitled “A Taste of Things to Come…” was held in conjunction with the Northern Ireland Science Festival and featured a selection of sustainable dishes utilising from local resources and crafted into a fine dining experience. It was clear that the chef team at the Merchant had fully embraced the concept, providing stunning fine dining using foraged local produce including mushrooms, wild herbs, seaweed as well as vegan options, game and local salmon.
